Ingredients

  • 200g dark chocolate (70% cocoa)
  • 100g butter, plus extra for greasing
  • 3 large eggs
  • 3 egg yolks
  • 100g caster sugar
  • 50g plain flour
  • Cocoa powder for dusting
  • Vanilla ice cream to serve

Instructions

  • Preheat oven to 200°C (400°F). Grease 4 ramekins with butter and dust with cocoa powder.
  • Melt chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.
  • In a separate bowl, whisk together eggs, egg yolks, and sugar until thick and pale.
  • Sift in the flour and gently fold until just incorporated.
  • Divide the batter evenly among the prepared ramekins.
  • Bake for 12 minutes until the edges are firm but the center still jiggles slightly.
  • Let cool for 1 minute, then carefully invert onto plates. Serve immediately with vanilla ice cream.
